RickWarren 0 Report post Posted April 18, 2013 Hello Friends, Some basic requirements must be met to roast coffee beans properly in the oven. Your oven must heat the beans to temperatures between 370 and 540 degrees F. During the roasting, the beans cast off their outer skin, known as chaff, so they should be handled properly to avoid a mess. After roasting, the beans should be cooled down quickly. 1. Open windows and doors so that the kitchen is well ventilated. 2. Preheat oven to 500 to 540 degrees F. 3. Spread the green coffee beans over the surface of the baking pan. The pan should have holes in the bottom for air circulation. The beans should only be one layer deep. Place the pan on the middle rack in the oven. 4. Roast beans for 15 to 20 minutes until you reach the desired roast. If the process takes more than 20 minutes, roast the next batch at a higher temperature. 5. Listen for cracks while the beans roast. As water evaporates, steam is being forced out of the beans. If you take the coffee beans out after hearing the initial crack, you will end up with a light roast. If you wait until the next crack, your beans will turn a dark brown and provide a more full-bodied flavor. 6. Take the beans out of the oven and pour them gently into a metal colander. Stir the beans to remove the chaff. Pour the beans from one colander into a second colander, continuing back and forth from colander to colander, to accelerate cooling.
