Green coffee beans contain polyphenols, which act to reduce free radicals in the body. All coffee beans include chlorogenic acid, a compound that absorbs free radicals, which can lead to cancer. However, green coffee beans contain a great deal more of this chlorogenic acid compound. Roasting the beans removes some of these properties.
